Back at the van I discovered that my first (successful) batch of lentil sprouts were ready for eating, a perfect accompaniment to avocado and hot-sauce.

Turns out the trick to successful sprouts is a. draining them really well after rinsing; and b. not leaving them on the dash in full sun (which just cooks them). Next in the van micro-garden – mungbeans!
